The second Northern Lights on Food Conference will bring together the key actors in the food sector, including academic researchers, institutes and the food industry, with experts in X-ray and neutron-based techniques. With the new tools provided by MAX IV and ESS at hand, we are developing a systematic understanding of food structure in connection to the processing as well as digestibility and bioavailability of nutrients. The aim is to establish and organise a larger Northern Light on Food consortium to fully take advantage of the new research tools provided by ESS and MAX IV in food science and development.
